FSASI "Scientific Research Institute of the Bakery Industry" is a leading scientific center for baking in Russia and the CIS countries. The Institute is the creator of most of the technologies implemented at bakery enterprises, the developer of numerous standards and an assortment of bakery products with long shelf life, including for the diet of astronauts. The Institute has the only museum of industrially valuable strains of microorganisms in Russia, which provides bakeries with pure cultures of yeast and lactic acid bacteria. On the basis of the institute, there is a scientific and technological center "Academy of Bakery NIIHP", equipped with the latest technological equipment.
